“Family Dinners” were originally created for the fellowship of all persons who have ever lived or whoever might live in the Anderson household for any significant amount of time. These dinners are now open to….anyone really.
Ashley or I plan what we will cook and split up the ingredients between all persons attending. Then the ladies cook and the boys clean… pretty good deal if you ask me.
Tonight we had Stuffed Acorn Squash. It’s incredible easy to prepare and has relatively few ingredients. This might be a regular around our house.
Stuffed Acorn Squash
- 1 cup shredded zucchini
- 1/2 cup crushed saltines
- 1/3 cup ketchup
- 1 egg
- 1 1/2 teaspoons dried minced onion
- 1/2 teaspoon garlic salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 pound ground beef
- 2 large acorn squash
- In a medium bowl, combine the first nine ingredients. Add beef; mix well. Cut squash in half; remove and discard the seeds. Fill with meat mixture. Place in a greased 13-in. x 9-in. x 2-in. baking dish. Cover and bake at 400 degrees F for 1 hour or until squash is tender. Uncover and bake for 10 minutes.
Ashley and I watched The Bachelor after dinner and the boys waited patiently for the drama to end so they could play Mario Kart. Good Night.
